Noilly Prat Dry Vermouth £17
From Marseillan on the south coast of France, and made with local grapes. Some is aged in casks inside and some outside in the elements, allowing a slow oxidation. The two are blended, then macerated with 20 herbs and spices, including Chamomile, Coriander, Bitter Oranges and Elderflower. It is light, dry, with delicate oxidative and floral notes.
Fernando De Castilla Vermut Blanco £19
From the Jerez-based sherry producer. The grapes are pressed and fermented in stainless steel, then aged in sherry barrels for 4 years. Infused with several botanicals including wormwood, orange and lemon peel, and cloves. Semi-sweet and persistent on the palate, with characteristic wormwood notes alongside clove and thyme.
Fernando De Castilla Sherry Cask Vermut £19
From the Jerez-based sherry producer. Produced from Palomimo and Pedro Ximenez grapes. The grapes are pressed and fermented in stainless steel, and then aged in sherry barrel for around 8 years. Marvellously mahogany in colour with rich aromas of dried fruit, nuts and herbal notes. Full-flavoured, silky and sweet with a characteristic, refreshing, yet bitter bite from the wormwood.
Dolin Rouge Vermouth £20
Dolin are based in Chambéry, the only region in France to have received an appellation d’origine contrôlée for its vermouths. Dolin vermouths are made with an above average proportion of wine, in which a secret recipe of locally grown herbs and plants are macerated before being sweetened with real sugar. Fresh grassy and citrus notes with deeper christmassy spices and a hint of tobacco.
Lillet Blanc £23
From a tiny distillery in Podensac, South of Bordeaux and made from a blend of semillon and sauvignon blanc wine and fruit brandies, and is matured in French oak barrels for several months. Floral and fruity, with a delicate sweetness and notes of candied orange, honey, pine resin and exotic fruits.
Vermut Lustau Blanco £25
Based on two classic Jerez wines: Fino Sherry and Moscatel, this Blanco attempts to marry a dry, crisp, mineral flavour profile with sweet, floral notes. An incredibly complex bouquet, Lustau Vermut have infused this delight with chamomile, gentian, marjoram, orange peel, rosemary and wormwood.
Mancino Vermouth Rosso Amaranto £29 
This modern vermouth was designed by Italian bartender, Mancino, specifically for classic cocktails. Made with 38 botanicals on a Trebbiano di Romagna wine base. It pours a beautiful amber red with a glint of caramel. Notes of vanilla, rhubarb, juniper, toasted wood, myrrh, chiretta, Christmas spices (Cloves, Cinnamon bark, dried Orange). Balanced, with a bittersweet medicinal root finish.
Cocchi Vermouth Di Torino £30
Made to a family recipe that’s over 100 years old, this is the classic Italian vermouth. The colour of brown sugar, with vibrant notes of cocoa and bitter orange. From the infusion of some noble and balsamic woods come light aromas of camphor and rosemary notes. A beautiful and unique perfumed finish: sandalwood, myrrh, and nutmeg.
