Isle of Harris Gin

This gin is designed to evoke the unique maritime nature of Harris: a beautiful, windswept island off the west coast of Scotland, with white sand beaches and surrounded by clear, turquoise seas. The key botanical used is Sugar Kelp, which is hand-harvested by a local diver. It imparts delicate notes of coastal breezes into the gin.

The barley-based spirit is made in their smallest copper still. The distilled liquid can be divided into three parts: the ‘heads’, the ‘heart’, and the ‘tails’. The ‘heads’ come first from the still and are high in abv but poorer in flavour, while the ‘tails’ are the last bits of the distillation and are low in flavour. The ‘heart’ is the middle and best bit, and Harris Gin is made using only the pure heart, creating an exceptionally smooth spirit.
